Yummy chocolate brownies
Guess what happens when offering free chocolate brownies to a mixed crowd? The adults jump, not to miss out. Something about these yummy, rich treats makes the scramble desperate!
Remember – over-baking the brownies dries out the soft, moist texture. Try the many variations.
Makes about 20
200 g butter or margarine
300 g dark or milk chocolate, coarsely chopped
3 extra-large eggs
250 ml (1 cup) caramel brown sugar
125 ml (½ cup) cake wheat flour
5 ml (1 tsp) baking powder
1 ml (pinch) salt
1. Preheat oven to 160 °C. Line and grease a baking pan of about 18 x 27 cm.
2. Melt butter and chocolate together in a microwave. Take out every 20 seconds to stir until completely melted and smooth.
3. Beat eggs and sugar together until light and pale. Fold chocolate mixture into egg mixture and mix well.
4. Sift flour, baking powder and salt together. Add dry ingredients to chocolate mixture and mix well. Spoon mixture into prepared pan.
5. Bake in the preheated oven for about 40 minutes. Leave to stand in pan for about 15 minutes to cool and cut into squares.
Variations
– Add 100 g coarsely chopped marshmallows or 60 g chocolate chips to batter.
– Add 50 g almonds, pecan- or hazelnuts, chopped.
– Rocky road cup cakes: Spoon batter into paper cup cakes. Bake in preheated oven at 160 °C for about 15 minutes or until done. Top with mini marshmallows and return to oven for about 1 minute for marshmallows to heat. Makes about 20 cup cakes.
