Cheese & chilli puffs
It is often the most basic and easiest recipes, using a few ingredients, that makes the best treats. These puffs being one of those! Enjoy warm, taken from the oven. This weekend might just provide for that opportunity.
Makes about 12
250 ml (1 cup) self-raising flour
5 ml baking powder
1 ml salt
2 ml mustard powder
7 ml crushed dried chillies or 2 ml cayenne pepper
250 ml (100 g) grated Cheddar cheese
1 extra-large egg
125 ml milk
15 ml butter or margarine, melted
1. Sift flour, baking powder, salt and mustard powder together. Add crushed chillies and cheese.
2. Whisk egg, milk and melted butter together. Add to dry ingredients and mix until just combined.
3. Spoon mixture into greased patty pans and bake in a preheated oven at 180 °C for 10 – 12 minutes, or until set and golden. Serve warm.
