Almond citrus slices
It’s great to use almonds in cooking or baking; whether raw, ground or flaked. My first choice will always be to use it in baking! These almond slices bring out the best in almonds.  Once I start eating, I cannot stop! That is when you’re an almond lover……

Makes about 12 large

Base
125 g butter or margarine, softened
60 ml (50 g) castor sugar
250 ml (140 g) cake wheat flour
1 ml salt

Topping
80 g butter or margarine, softened
80 ml (70 g) castor sugar
2 extra-large eggs
15 ml grated orange or lemon rind
100 g ground almonds
50 g flaked almonds
60 ml smooth apricot jam, heated slightly

1. Base: Cream butter and sugar together until light and creamy. Sift flour and salt together and add to butter mixture and mix well. Spread evenly into a greased pan of about 20 x 24 cm.
2. Topping: Cream butter and sugar together. Add eggs, one at a time, beating well after each addition until light and creamy. Stir in orange rind and ground almonds. Mix well and spread over base.
3. Sprinkle with flaked almonds and bake in a preheated oven at 180 °C for about 20 minutes. Brush with warm apricot jam and leave to cool in pan. Cut into slices.
