Peanut caramel bars
A lovely treat for kids, especially for the festive season ahead!
Makes about 25
125 g butter or margarine, softened
125 ml (100 g) sugar
1 extra-large egg yolk
310 ml (175 g) cake flour
2 ml baking powder
25 ml custard powder
2 ml salt
Topping
100 ml (80 g) light brown sugar
30 ml golden syrup
100 g butter or margarine
125 ml (50 g) unsalted peanuts, toasted and coarsely chopped
1. Cream butter and sugar together. Add egg yolk and beat well until light and creamy.
2. Sift flour, baking powder, custard powder and salt together. Add to creamed mixture and mix well to firm mixture.
3. Press mixture into a greased 20 x 24 cm baking pan. Bake in a preheated oven at 180 °C for 20 – 25 minutes. Let cool slightly.
4. Topping: Combine brown sugar, golden syrup and butter in a small, heavy-based saucepan. Stir over low heat until butter has melted and sugar has dissolved. Simmer gently for 5 minutes. Remove from heat and stir in peanuts.
5. Spread peanut mixture over base. Bake in a preheated oven at 180 °C for about 5 minutes. Leave to cool in pan and cut into bars. Store in an airtight container.
